Make this rich and flavorful chicken pasta in one pot for easy cleanup. It features tender chicken, fresh spinach, and a creamy garlic sauce.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces dried pasta (penne or rotini work well)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and Italian seasoning and cook for 1 minute until fragrant.
  4. Add the dried pasta and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally until the pasta is nearly tender.
  5. Stir in the heavy cream and return the chicken to the pot. Cook for 2 minutes until the sauce begins to thicken slightly.
  6. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  7. Add the fresh spinach and stir until it wilts completely into the sauce, about 1-2 minutes.
  8. Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley.

Notes

  • For a richer sauce, substitute 1/4 cup of the heavy cream with 2 ounces of softened cream cheese.
  • If the sauce becomes too thick while simmering, add a splash more broth or milk.
  • Use rotisserie chicken if you want to skip the initial cooking step for the chicken.
