Prepare this easy, one-pan creamy spinach chicken skillet for a quick weeknight dinner featuring tender chicken breasts in a rich Parmesan cream sauce.

  • 2 large boneless, skinless chicken breasts, halved horizontally
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1/2 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season the chicken cutlets lightly with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 4 to 5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove chicken from the skillet and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Add the spinach to the skillet in batches, stirring until it wilts down into the sauce.
  8. Reduce the heat to low. Stir in the 1/2 cup of Parmesan cheese until the sauce is smooth and thickened. Taste and adjust seasoning with salt and pepper.
  9. Return the cooked chicken to the skillet, nestling it into the sauce. Spoon some sauce over the chicken.
  10. Simmer for 2 minutes to heat the chicken through. Serve immediately, topped with extra grated Parmesan.

Notes

  • For a lower-carb option, substitute half the heavy cream with chicken broth.
  • If using frozen spinach, thaw it completely and squeeze out all excess water before adding it to the sauce.
  • You can use chicken thighs instead of breasts; adjust cooking time as needed.
