1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
12 ounces pasta (fettuccine or penne recommended)
2 tablespoons butter
3 cloves garlic, minced
1/2 cup chicken broth
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
5 ounces fresh spinach
1/4 teaspoon nutmeg (optional)
Instructions
Season the chicken pieces with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Drain the pasta.
In the same skillet, melt the butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
Reduce heat to low. Stir in the heavy cream and nutmeg, if using. Let the sauce warm through but do not boil.
Stir in the Parmesan cheese until the sauce is smooth.
Add the fresh spinach to the sauce and stir until it wilts completely.
Return the cooked chicken to the skillet. Add the drained pasta. Toss everything together until the pasta is coated in the sauce.
If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
