Ingredients
Scale
1 pound fresh strawberries, hulled and sliced
1/2 cup granulated sugar (for macerating)
1/4 cup granulated sugar (for base)
1 cup heavy cream
1 cup whole milk
1/2 cup granulated sugar (for base)
1 teaspoon vanilla extract
Pinch of salt
Instructions
Combine the sliced strawberries and 1/2 cup of sugar in a bowl. Gently stir. Let the strawberries sit at room temperature for at least 30 minutes to macerate, releasing their juices.
Lightly mash about half of the macerated strawberries with a fork to create a chunky puree. Keep the remaining strawberries whole or roughly chopped.
In a separate large bowl, whisk together the heavy cream, whole milk, the remaining 1/2 cup sugar, vanilla extract, and salt until the sugar dissolves completely.
Stir the mashed and whole macerated strawberries, including all the accumulated juice, into the cream mixture. Mix well.
Chill the ice cream base in the refrigerator for at least 2 hours, or until very cold.
Pour the chilled base into your ice cream maker and churn according to the manufacturer’s instructions, usually 20 to 30 minutes, until it reaches a soft-serve consistency.
Transfer the soft ice cream to an airtight container. Freeze for an additional 2 to 4 hours to firm up before serving.
Notes
For a deeper color and flavor, you can gently cook the macerated strawberries and sugar down to a thick sauce, cool it completely, and then mix it into the chilled base.
If you prefer a smoother texture without chunks, blend all the macerated strawberries before adding them to the base.
If your ice cream maker requires a custard base, heat the milk, cream, and sugar until the sugar dissolves, then chill thoroughly before adding the fruit puree.
