2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
4 cups vegetable broth
1/2 cup heavy cream
1/4 cup fresh basil leaves, chopped
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Stir in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat and cook for 15 minutes.
Remove from heat. Carefully use an immersion blender to blend the soup until smooth. Alternatively, transfer soup in batches to a regular blender.
Stir in heavy cream and fresh basil.
Season with salt and pepper to taste. Heat gently without boiling before serving.
Notes
For a richer flavor, you can use chicken broth instead of vegetable broth.
Adjust the amount of cream to your preference for creaminess.
Garnish with extra fresh basil leaves or a swirl of cream before serving.
