  • 4 cups low-sodium chicken broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles, undrained
  • 3 cups cooked, shredded chicken breast (rotisserie chicken works well)
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup heavy cream or half-and-half
  • Salt and black pepper to taste
  • Optional Garnishes: Shredded Monterey Jack cheese, fresh cilantro, avocado slices

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and jalapeño (if using). Cook for 1 minute until fragrant.

  4. Pour in the chicken broth. Add the rinsed cannellini beans and the undrained diced green chiles. Bring the mixture to a simmer.
