  • 1 cup (2 sticks) unsalted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1 cup powdered sugar, for rolling

Instructions

  1. Whisk together the flour, cocoa powder, baking powder, and salt in a medium bowl. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Fold in the chocolate chips if using. The dough will be thick.
  5. Place the powdered sugar in a shallow dish. Scoop the dough into balls, about 1.5 tablespoons each.
  6. Roll each dough ball thoroughly in the powdered sugar until completely coated.
  7. Place the coated dough balls about 2 inches apart on baking sheets lined with parchment paper.
  8. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cracks will become more defined as they cool.

  • For the best crackle effect, ensure the dough balls are completely coated in powdered sugar before baking.
  • Do not overbake; slightly underdone cookies result in a fudgier center.
  • You can chill the dough for 30 minutes if you prefer firmer cookies, but chilling is not required for this recipe.
