2 lbs chicken wings (flats and drumettes)
1 tablespoon baking powder (aluminum-free preferred)
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
Pat the chicken wings completely dry using paper towels. This step is important for crispiness.
In a medium bowl, combine the baking powder, salt, garlic powder, onion powder, black pepper, paprika, and cayenne pepper. Mix well.
Add the dried chicken wings to the bowl. Toss until every wing is evenly coated with the dry rub mixture.
Preheat your air fryer to 400°F (200°C) for 5 minutes.
Arrange the wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 20 minutes.
Flip the wings. Continue to air fry for another 5 to 10 minutes, or until the skin is deep golden brown and very crispy.
Remove from the air fryer and serve immediately.
Notes
Do not skip drying the wings thoroughly; excess moisture prevents crisping.
Use aluminum-free baking powder for the best flavor result.
For extra flavor, toss the cooked wings in your favorite sauce after they come out of the air fryer.
