Make crispy chicken tenders in the air fryer and assemble them into wraps with fresh vegetables and a simple, tangy garlic yogurt sauce.

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Cooking spray
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup sliced tomato
  • 1/4 cup thinly sliced red onion
  • For the Garlic Yogurt Sauce:
  • 1 cup plain Greek yogurt (full fat or 2%)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried dill
  • Pinch of salt

Instructions

  1. Prepare the chicken coating: Mix flour, salt, pepper, paprika, and garlic powder in a shallow dish. Place the beaten egg in a second dish, and the panko breadcrumbs in a third dish.
  2. Dredge each chicken strip first in the flour mixture, shaking off excess. Dip into the egg, letting excess drip off. Coat thoroughly in the panko breadcrumbs, pressing gently to adhere.
  3. Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray. Arrange the coated chicken in a single layer, working in batches if necessary. Spray the tops of the chicken lightly with cooking spray.
  4. Air fry the chicken for 12 to 15 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  5. Prepare the sauce: While the chicken cooks, combine the Greek yogurt, minced garlic, lemon juice, dill, and salt in a small bowl. Stir until smooth.
  6. Warm the tortillas briefly in a dry skillet or microwave until pliable.
  7. Assemble the wraps: Lay a warm tortilla flat. Spread a generous amount of garlic yogurt sauce down the center. Layer with lettuce, tomato slices, red onion, and 3 to 4 pieces of crispy chicken.
  8. Fold the sides of the tortilla inward, then tightly roll from the bottom up to secure the filling. Serve immediately.

Notes

  • For extra crispiness, chill the coated chicken strips for 15 minutes before air frying.
  • You can prepare the garlic yogurt sauce up to two days ahead and store it in the refrigerator.
  • Substitute chicken breast with firm tofu for a vegetarian option; cook tofu strips for 10-12 minutes.
