Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
Spread the sprouts in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisping.
Roast for 15 minutes.
Remove the pan from the oven. In a small bowl, mix the grated Parmesan cheese and minced garlic.
Toss the partially cooked sprouts with the Parmesan-garlic mixture until they are well coated.
Return the sprouts to the oven and roast for another 10 to 15 minutes, or until the sprouts are tender inside and the cheese is golden brown and crispy.
Remove from the oven, toss with lemon zest if using, and serve immediately.
For the Air Fryer method: Toss sprouts with oil, salt, and pepper. Air fry at 380 degrees Fahrenheit (195 degrees Celsius) for 10 minutes. Shake the basket. Add Parmesan and garlic mixture and cook for another 5 to 7 minutes until crispy.
Notes
For maximum crispiness, ensure the cut sides of the sprouts are facing down on the baking sheet during the initial roasting phase.
Use finely grated, dry Parmesan cheese for the best crust formation. Freshly grated is preferred over pre-shredded if possible.
Do not skip the single-layer arrangement; crowding causes steaming, which leads to soggy sprouts.
