1 block (14-16 oz) extra-firm tofu, pressed and cubed
2 tbsp cornstarch
2 tbsp soy sauce or tamari
1 tbsp sesame oil
1 tbsp vegetable oil
1 cup broccoli florets
1 cup sliced carrots
1 cup sliced bell peppers (any color)
1/2 cup sliced snap peas
1/4 cup teriyaki sauce
1 tsp grated fresh ginger
1 clove garlic, minced
Sesame seeds for garnish (optional)
Instructions
In a bowl, toss the pressed tofu cubes with cornstarch until evenly coated.
In a small bowl, whisk together soy sauce, sesame oil, teriyaki sauce, grated ginger, and minced garlic. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the coated tofu to the skillet in a single layer. Cook for 5-7 minutes, flipping occasionally, until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
Add broccoli florets, sliced carrots, and sliced bell peppers to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
Add snap peas and cook for another minute.
Return the crispy tofu to the skillet. Pour the teriyaki sauce mixture over everything.
Toss to coat evenly and cook for 1-2 minutes until the sauce has thickened and coats the tofu and vegetables.
Serve immediately, garnished with sesame seeds if desired.
Notes
For extra crispy tofu, ensure you press out as much water as possible.
Feel free to customize with your favorite vegetables.
Adjust teriyaki sauce to your taste preference.
