Melt-in-Your-Mouth Crockpot Beef Tips and Gravy

Make incredibly tender beef tips in your slow cooker with minimal effort. This set-it-and-forget-it recipe creates rich, savory gravy perfect for serving over egg noodles or mashed potatoes for a hearty weeknight dinner.

  • 2 pounds beef stew meat (or round steak cut into 1-inch pieces)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • Egg noodles or mashed potatoes, for serving

Instructions

  1. Pat the beef tips dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the beef tips in batches until they have color on all sides. You do not need to cook them through. Transfer the browned beef to your slow cooker.
  3. Add the chopped onion and minced garlic to the skillet and cook for 2 minutes until softened. Scrape up any browned bits from the bottom of the skillet.
  4. Add the cream of mushroom soup, cream of celery soup, beef broth, Worcestershire sauce, thyme, pepper, and salt to the slow cooker. Stir everything together until combined.
  5. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is very tender.
  6. About 30 minutes before serving, mix the cornstarch and cold water in a small bowl to create a slurry. Stir this slurry into the slow cooker mixture.
  7. Increase the slow cooker setting to high (if it was on low) and cook, uncovered, for 15 to 20 minutes, stirring occasionally, until the gravy thickens to your desired consistency.
  8. Serve the tender crockpot beef tips and gravy hot over prepared egg noodles or mashed potatoes.

Notes

  • For an extra layer of flavor, you can add one packet of dry onion soup mix along with the canned soups.
  • If you prefer a restaurant style beef tips flavor, substitute the cream soups with 1 cup of beef broth, 1/4 cup of soy sauce, and 1 tablespoon of dried minced onion.
  • This recipe freezes well. Cool completely before storing in an airtight container for up to 3 months.
