This Crockpot Lasagna Soup captures all the rich, cheesy flavors of classic lasagna in a simple, spoonable soup. It is a perfect set-it-and-forget-it meal for busy weeknights.

  • 1 pound Italian sausage or ground beef
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can crushed tomatoes
  • 4 cups beef or chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream (optional, for richness)
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided

Instructions

  1. Place the Italian sausage or ground beef in a large skillet. Cook over medium heat until browned. Drain off any excess grease.
  2. Transfer the cooked meat to your slow cooker.
  3. Add the marinara sauce, crushed tomatoes, broth, Italian seasoning, garlic powder, salt, pepper, and water to the slow cooker. Stir everything together well.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles. Cook until the noodles are tender, stirring occasionally to prevent sticking.
  6. If using, stir in the heavy cream.
  7. Stir in 1 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese until melted and creamy.
  8. Ladle the soup into bowls. Top each serving with the remaining mozzarella and Parmesan cheese. Serve immediately.

Notes

  • For the best texture, do not overcook the noodles; they will continue to soften after you turn the slow cooker off.
  • If you skip the heavy cream, the soup will have a slightly thinner, more broth-like consistency.
  • You can substitute ground turkey for the beef or sausage if you prefer a lighter flavor profile.
