Instructions

  1. Prepare the puff pastry: Unfold the thawed puff pastry sheets onto a lightly floured surface. If using a block, roll it into a rough rectangle about 10×12 inches. Cut each sheet lengthwise into two equal rectangles, resulting in four long pieces.
  2. Cut the rectangles into triangles: Cut each long rectangle diagonally to create two triangles. You should have eight triangles in total.
  3. Place the chocolate: Take one triangle and place one piece of chocolate near the wide base edge.
  4. Roll the croissant: Starting at the wide base, tightly roll the pastry up toward the point. You want the chocolate to be encased inside the roll.
  5. Shape and rest: Gently curve the rolled pastry into a crescent shape. Place the finished croissants on a baking sheet lined with parchment paper, ensuring the tip is tucked underneath to prevent unrolling.
  6. Chill the croissants: Place the baking sheet in the refrigerator for 15 minutes. This helps the pastry hold its shape during baking. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) during this time.
  7. Apply egg wash: Brush the tops of the chilled croissants evenly with the egg wash. If desired, sprinkle lightly with granulated sugar for extra shine and crunch.
  8. Bake: Bake for 15 to 20 minutes, or until the croissants are puffed, deeply golden brown, and flaky.
