You need a simple, hearty meal for a busy night. This easy Crockpot Potato Soup recipe delivers creamy, cheesy comfort with minimal effort. Just set it in your slow cooker and enjoy a family favorite later.

  • 3 pounds Russet potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 8 ounces cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1 cup frozen shredded hash browns (optional, for extra thickness)
  • 1 cup water (if using hash browns)
  • For Serving: Cooked, crumbled bacon, sour cream, chopped green onions

Instructions

  1. Place the diced potatoes, chopped onion, salt, and pepper into your slow cooker. Pour the chicken broth over the mixture.
  2. Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the potatoes are very tender.
  3. In a separate bowl, whisk together the flour and milk until smooth. This creates your slurry.
  4. Once the potatoes are soft, stir the milk/flour slurry into the slow cooker mixture.
  5. Add the cubed cream cheese and shredded cheddar cheese. Stir until the cheeses are completely melted and the soup is smooth and creamy.
  6. If you are using frozen hash browns, stir them in now along with 1 cup of water. Cook on high for 30 minutes, stirring occasionally, until the hash browns are soft and the soup has thickened.
  7. Taste and adjust salt and pepper as needed.
  8. Serve hot, topped with bacon, a dollop of sour cream, and green onions.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cheese.
  • If you skip the optional hash browns, you might need slightly less liquid, or you can use half-and-half instead of milk for extra richness.
  • This recipe freezes well. Cool completely before storing in an airtight container.
