1/2 cup milk (any type)
1 cup cooked, crumbled sausage or bacon
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 12-cup standard muffin tin or use silicone liners.
In a large bowl, whisk the eggs and milk together until fully combined. Add the salt and pepper.
Distribute the cooked sausage or bacon evenly among the 12 muffin cups.
Sprinkle the shredded cheese over the meat in each cup.
Carefully pour the egg mixture over the fillings, filling each cup about three-quarters full.
Bake for 15 to 18 minutes, or until the egg muffins are set and slightly golden.
Let the egg muffins cool in the tin for 5 minutes before removing them.
Notes
For a low-carb option, skip any starchy vegetables and use only meat and cheese.
You can freeze these muffins for up to one month. Cool completely, then place them in an airtight, freezer-safe container.
To reheat, microwave a frozen muffin for 60 to 90 seconds.
