Make this classic, no-lettuce Greek salad in under 15 minutes. It features crisp vegetables, salty feta, and a bright, flavorful oregano vinaigrette, perfect for a quick, healthy side dish or light lunch.

  • 4 large ripe tomatoes, cut into wedges
  • 1 large English cucumber, cut into thick half-moons
  • 1 small red onion, thinly sliced
  • 1 cup Kalamata olives, whole or pitted
  • 8 ounces good quality feta cheese, cut into thick blocks (not crumbled)
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Cut the tomatoes into wedges, slice the cucumber into thick half-moons, and thinly slice the red onion. Place all prepared vegetables and the Kalamata olives into a large mixing bowl.
  2. Make the dressing: In a small jar, combine the extra virgin olive oil, fresh lemon juice, dried oregano, sea salt, and black pepper. Close the jar tightly and shake well until the dressing emulsifies slightly.
  3. Dress the salad: Pour about two-thirds of the dressing over the vegetables and olives. Gently toss the mixture to coat everything evenly.
  4. Assemble: Transfer the dressed vegetables to your serving platter. Place the blocks of feta cheese directly on top of the vegetables.
  5. Finish: Drizzle the remaining dressing over the feta cheese. Serve immediately for the best texture.

  • For the most authentic flavor, avoid crumbling the feta; serve it in large, satisfying blocks.
  • If you prefer a slightly sweeter dressing, add 1/2 teaspoon of honey to the vinaigrette mixture.
