  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1/4 cup harissa paste
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Bowls:
  • 2 cups cooked basmati rice
  • 2 cups chopped romaine lettuce
  • 1 cup roasted sweet potatoes or chickpeas (optional)
  • 1/4 cup sliced red onion
  • For the Vinaigrette (Optional):
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon harissa paste
  • 1 teaspoon honey

Instructions

  1. Combine the harissa paste, honey, 2 tablespoons of olive oil, minced garlic, cumin, salt, and pepper in a medium bowl. Mix well to create the marinade.
  2. Add the cut chicken pieces to the marinade. Toss until every piece is fully coated. Let the chicken marinate for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavor.
  3. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) or heat a grill pan over medium-high heat.
  4. If baking, spread the marinated chicken in a single layer on a baking sheet lined with parchment paper. Bake for 18-22 minutes, or until cooked through and slightly caramelized. If grilling, cook the chicken for 5-7 minutes per side until done.
  5. While the chicken cooks, prepare your bowl components: steam the rice and chop the lettuce.
  6. If making the vinaigrette, whisk together the olive oil, lemon juice, 1 teaspoon harissa paste, and 1 teaspoon honey in a small jar until emulsified.
  7. Assemble your harissa chicken bowls: start with a base of rice and lettuce. Top with the cooked honey harissa chicken, roasted sweet potatoes (if using), and red onion slices.
  8. Drizzle the vinaigrette over the bowls before serving.
