Make these simple, protein-packed egg bites in a muffin tin for perfect, grab-and-go breakfasts or healthy snacks. This recipe is great for meal prep.

  • 1/4 cup milk or unsweetened almond milk
  • 1/2 cup shredded cheese (cheddar or Monterey Jack work well)
  • 1/4 cup cooked, crumbled bacon or diced ham (optional)
  • 1/4 cup chopped vegetables (spinach, bell peppers, or onions)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin or use silicone liners.
  2. In a large bowl, whisk the eggs and milk together until they are well combined and slightly frothy.
  3. Season the egg mixture with salt and pepper. Remember that bacon or ham adds salt, so season lightly at first.
  4. Stir in the shredded cheese and your chosen chopped vegetables. If using meat, add it now.
  5. Divide the mixture evenly among the 12 muffin cups. Fill each cup about three-quarters full.
  6. Bake for 15 to 20 minutes, or until the egg bites are set in the center and lightly golden around the edges. You can test doneness by inserting a toothpick; it should come out clean.
  7. Remove the tin from the oven and let the egg bites cool in the tin for about 5 minutes before carefully removing them.
  8. Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. These are excellent for quick, healthy egg recipes and meal prep egg bites.

Notes

  • For a creamier texture, add 1 tablespoon of cream cheese, broken into small pieces, to each muffin cup before baking.
  • Feel free to substitute your favorite fillings; these versatile egg dishes work well with mushrooms, feta cheese, or sun-dried tomatoes.
