Classic Slow Cooker Velveeta and Rotel Dip with Ground Beef

Make this easy, cheesy Rotel dip in your slow cooker using Velveeta, diced tomatoes, and seasoned ground beef for a perfect party appetizer.

Ingredients

  • 1 pound ground beef or sausage
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cubed
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup milk (optional, for thinning)

Instructions

  1. Brown the ground beef or sausage in a skillet over medium heat. Drain off any excess grease.
  2. Transfer the cooked meat to a small slow cooker.
  3. Add the undrained Rotel, cubed Velveeta, and cubed cream cheese to the slow cooker.
  4. Cook on low for 1 to 2 hours, stirring every 30 minutes until all cheeses are completely melted and smooth.
  5. If the dip is too thick, stir in milk, one tablespoon at a time, until you reach your desired consistency.
  6. Serve warm with tortilla chips or crackers.

Notes

  • For a sausage version, use breakfast sausage instead of ground beef.
  • If you do not have a slow cooker, you can melt the ingredients together in a saucepan over low heat on the stovetop. Stir constantly.
  • Add 1/4 cup chopped onion with the meat for extra flavor.
