3 cups cooked sushi rice
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
8 ounces imitation crab meat, shredded
4 ounces cream cheese, softened
1/4 cup mayonnaise
2 tablespoons Sriracha (optional, for spicy mix)
1/4 cup green onions, sliced
1/4 cup toasted sesame seeds
1/4 cup furikake seasoning
2 tablespoons Kewpie mayonnaise (for topping)
1 tablespoon Sriracha (for topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Toss this mixture with the cooked sushi rice until evenly coated. Press the seasoned rice evenly into the bottom of the prepared baking dish.
In a medium bowl, combine the shredded imitation crab, softened cream cheese, 1/4 cup mayonnaise, and 2 tablespoons of Sriracha if you want a spicy base. Mix until well combined.
Spread the crab mixture evenly over the layer of rice in the baking dish.
Sprinkle the green onions and toasted sesame seeds over the crab layer.
Bake for 15 to 20 minutes, or until the topping is heated through and the edges are lightly golden.
While the bake is cooking, prepare the topping: Whisk together the Kewpie mayonnaise and 1 tablespoon of Sriracha until smooth.
Remove the dish from the oven. Drizzle the spicy mayo topping over the casserole. Sprinkle generously with furikake seasoning.
Let it cool for 5 minutes before slicing and serving warm.
Notes
You can substitute real crab meat for imitation crab if desired.
For a richer flavor, mix a small amount of nori flakes into the rice layer.
Serve this dish with slices of avocado on the side for extra flavor.
