Easy Ground Beef Tamale Pie

A simple, comforting Tex-Mex casserole featuring a seasoned ground beef and bean filling topped with a quick cornbread crust.

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can mild red enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese, divided
  • 1 package (8.5 ounces) corn muffin mix (like Jiffy)
  • 1 large egg
  • 1/3 cup milk

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie plate or an 8×8 inch baking dish.
  2. Heat the oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the black beans, enchilada sauce, chili powder, cumin, and salt into the beef mixture. Cook for 5 minutes until heated through.
  4. Remove the skillet from the heat. Stir in 1/2 cup of the shredded cheddar cheese. Pour this meat mixture into the prepared pie plate.
  5. In a medium bowl, prepare the corn muffin mix according to package directions, usually mixing the dry mix with the egg and milk.
  6. Spoon the cornbread batter evenly over the meat mixture in the pie plate.
  7. Bake for 20 to 25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. Sprinkle the remaining 1/2 cup of cheddar cheese over the top during the last 5 minutes of baking.
  9. Let the pie cool for 5 minutes before slicing and serving.

Notes

  • You can substitute kidney beans or pinto beans for black beans if you prefer.
  • For extra flavor, add 1/2 cup of frozen corn kernels to the meat filling.
  • This casserole freezes well before baking; cover tightly and freeze for up to three months. Thaw overnight before baking as directed.
