1 cup whole milk
1/2 cup heavy cream
4 ounces high-quality dark chocolate (70% cacao minimum), finely chopped
2 tablespoons granulated sugar (adjust to taste)
1 teaspoon vanilla extract
Pinch of salt
Instructions
Combine the milk and heavy cream in a small saucepan over medium heat. Heat until small bubbles form around the edges, but do not let it boil.
Remove the saucepan from the heat. Add the finely chopped dark chocolate to the warm milk mixture.
Let the chocolate sit for one minute to soften, then whisk gently until the chocolate is completely melted and the mixture is smooth.
Return the saucepan to low heat. Whisk in the sugar, vanilla extract, and salt. Continue to heat gently for 2 to 3 minutes, whisking constantly, until the chocolate thickens slightly to a velvety consistency. Do not boil.
Pour the hot chocolate into mugs immediately.
Notes
Use chocolate with at least 70% cacao for the authentic, intense flavor.
For an extra thick texture, you can whisk in 1/2 teaspoon of cornstarch mixed with 1 tablespoon of cold milk before heating.
Serve with whipped cream or a dusting of cocoa powder if desired.
