Learn how to make the best homemade fried okra with a golden, crispy coating. This Southern comfort food favorite uses a buttermilk soak and seasoned cornmeal dredge to ensure zero sliminess and maximum crunch.

Ingredients

Scale
  • 2 lbs fresh okra, sliced into 1/2-inch rounds
  • 1 cup buttermilk
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Vegetable oil, for frying

Instructions

  1. Prepare the okra: Wash the fresh okra well and pat it completely dry with paper towels. Slice the okra into 1/2-inch rounds.
  2. Soak the okra: Place the sliced okra in a bowl and cover it completely with buttermilk. Let it soak for at least 30 minutes. This step helps prevent sliminess.
  3. Prepare the dredge: In a shallow dish, whisk together the cornmeal, flour, salt, pepper, garlic powder, and paprika. This is your seasoned cornmeal coating.
  4. Coat the okra: Working in batches, remove the okra from the buttermilk, letting excess drip off. Toss the moist okra pieces thoroughly in the cornmeal mixture until every piece is well coated. Press the coating onto the okra gently.
  5. Heat the oil: Pour vegetable oil into a large, deep skillet or Dutch oven until it reaches about 1 inch deep. Heat the oil over medium-high heat until it reaches 375 degrees Fahrenheit. Use a thermometer to check the temperature for best results.
  6. Fry in batches: Carefully add the coated okra to the hot oil, making sure not to overcrowd the pan. Overcrowding lowers the oil temperature and results in soggy okra.
  7. Cook until golden: Fry the okra for 3 to 5 minutes, turning occasionally, until it is deeply golden brown and crispy.
  8. Drain: Remove the crispy fried okra with a slotted spoon and place it on a wire rack set over a baking sheet or on a plate lined with paper towels to drain excess oil.
  9. Serve immediately: Serve your ultimate crispy fried okra hot as a side dish or appetizer.

Notes

  • For an extra crunchy coating, you can double-dip: after the first coating, dip the okra back into the buttermilk briefly, then back into the cornmeal mixture.
  • If you prefer an oven fried okra or air fryer okra method, toss the coated okra lightly with cooking spray and bake at 400 degrees Fahrenheit or air fry at 380 degrees Fahrenheit until crisp.
  • Serve this southern fried okra with a simple dipping sauce made from mayonnaise, hot sauce, and a squeeze of lemon juice.
