Make easy, fudgy peppermint brownies in one bowl, topped with a rich chocolate ganache and crushed candy canes for a festive winter treat.

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup peppermint baking chips (optional)
  • 1/2 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1 teaspoon peppermint extract (for ganache)
  • 1/2 cup crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In the same bowl, add the flour, cocoa powder, and salt. Mix with a spatula until just combined; do not overmix.
  5. Fold in the semi-sweet chocolate chips and peppermint baking chips, if using.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack.
  9. Prepare the ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat.
  10. Place the 1 cup of chocolate chips in a heatproof bowl. Pour the hot cream over the chips. Let stand for 5 minutes, then whisk until smooth.
  11. Stir the peppermint extract into the ganache.
  12. Pour the ganache over the cooled brownies and spread evenly.
  13. Immediately sprinkle the crushed candy canes over the top of the ganache.
  14. Allow the ganache to set for about 30 minutes before cutting into squares.

Notes

  • For extra fudgy brownies, slightly underbake them by about 2 minutes.
  • You can use store-bought peppermint bark pieces instead of crushing candy canes for the topping.
  • If you do not have peppermint baking chips, substitute with an extra 1/2 cup of semi-sweet chocolate chips in the batter.
