1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon olive oil
4 tablespoons unsalted butter, divided
1 medium yellow onion, chopped
4 cloves garlic, minced
1.5 cups long-grain white rice, uncooked
3 cups chicken broth
1 teaspoon dried Italian seasoning
0.5 teaspoon salt
0.25 teaspoon black pepper
0.5 cup heavy cream (optional, for creaminess)
2 tablespoons fresh parsley, chopped, for garnish
Instructions
Season the cut chicken pieces with salt and pepper.
Heat the olive oil and 1 tablespoon of butter in a large, deep skillet or Dutch oven over medium-high heat.
Add the chicken and cook until lightly browned on all sides, about 4-5 minutes. Remove the chicken from the pot and set it aside.
Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the pot. Once melted, add the chopped onion and cook until softened, about 3 minutes.
Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
Stir in the uncooked rice, Italian seasoning, salt, and pepper. Cook for 1 minute, stirring constantly to coat the rice.
Pour in the chicken broth. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pot.
Return the browned chicken to the pot. Reduce the heat to low, cover the pot tightly, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during this time.
Remove the pot from the heat. If using, stir in the heavy cream. Cover the pot again and let it stand for 5 minutes.
Fluff the rice gently with a fork. Garnish with fresh parsley before serving.
Notes
For a complete meal, stir in 1 cup of frozen peas or chopped broccoli florets during the last 5 minutes of simmering.
Use chicken thighs for a moister result.
If you prefer a tangier flavor, substitute 0.5 cup of the broth with dry white wine, letting it cook down before adding the remaining broth.
