Make quick, flavorful chicken bites coated in a rich garlic butter sauce, cooked with mixed vegetables.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup sliced bell peppers (any color)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Reduce heat to medium. Add butter to the skillet and let it melt. Add minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in chicken broth and heavy cream. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly for 2 minutes.
  5. Add broccoli florets and carrots to the sauce. Cook for 4 minutes until slightly tender.
  6. Add bell peppers and the cooked chicken back to the skillet. Toss everything to coat in the garlic butter sauce. Cook for 1-2 minutes until the vegetables are tender-crisp and the chicken is reheated.
  7. Stir in fresh parsley. Serve immediately.

Notes

  • Serve this dish over rice or pasta to soak up the extra sauce.
  • You can substitute the vegetables with mushrooms, zucchini, or green beans based on what you have available.
  • For a tangier flavor, add 1 teaspoon of lemon juice to the sauce at the end.
