1.5 lb salmon fillet, skin removed and cut into 1-inch cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
6 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup fresh lemon juice
1 tablespoon fresh parsley, chopped
2 cups cooked white rice (for serving)
1 cup steamed broccoli florets (for serving)
Instructions
Pat the salmon cubes dry with paper towels. Season the salmon with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the salmon cubes in a single layer, ensuring not to overcrowd the pan.
Sear the salmon for 2 to 3 minutes per side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
Reduce the heat to medium-low. Add the butter to the same skillet. Let it melt completely.
Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
Stir in the lemon juice. Cook for 30 seconds, scraping up any browned bits from the bottom of the pan.
Return the cooked salmon bites to the skillet. Toss gently to coat them completely in the garlic butter sauce.
Stir in the fresh parsley.
To assemble the bowls, divide the cooked rice between two bowls. Top with steamed broccoli florets and then spoon the garlic butter salmon bites and extra sauce over the rice.
Notes
For a richer sauce, add 1 tablespoon of heavy cream after the lemon juice.
You can use brown rice or quinoa instead of white rice.
If you prefer a spicier flavor, add a pinch of red pepper flakes with the garlic.
