  • 4 (6 ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the salmon fillets completely dry with paper towels. This step is key for crispy edges.
  2. Season both sides of the salmon with salt and pepper.
  3. Heat the olive oil in a large, oven-safe skillet over medium-high heat until shimmering.
  4. Place the salmon fillets skin-side down (if using skin-on) or presentation-side down in the hot skillet. Sear for 4 to 5 minutes without moving them until the edges are golden brown and crisp.
  5. Flip the salmon fillets carefully. Reduce the heat to medium-low.
  6. Add the butter and minced garlic to the skillet around the salmon. Let the butter melt and foam.
  7. Add the Italian seasoning to the melted butter sauce. Baste the tops of the salmon fillets with the garlic butter mixture for 1 minute.
  8. Transfer the skillet to a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius).
  9. Bake for 5 to 8 minutes, depending on the thickness of the fillets, until the salmon is cooked through.
  10. Remove the skillet from the oven. Drizzle with fresh lemon juice and sprinkle with fresh parsley before serving immediately.

Notes

  • For extra crispy skin, ensure the skin is very dry before searing. You can also place the skillet in the oven for 2 minutes before adding the oil to preheat the pan thoroughly.
  • Serve this salmon with roasted asparagus or creamy mashed potatoes.
  • If you prefer not to use an oven, cover the skillet after flipping the salmon and continue cooking on low heat until done, basting frequently.
