Cook a flavorful shrimp and broccoli meal quickly in one skillet using a rich lemon garlic butter sauce. This recipe is fast and requires minimal cleanup.
Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Melt 2 tablespoons of the butter in a large skillet over medium-high heat.
Add the broccoli florets to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until bright green and slightly tender-crisp. Remove the broccoli from the skillet and set aside.
Add the remaining 2 tablespoons of butter to the same skillet. Add the minced garlic and red pepper flakes (if using). Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Add the seasoned shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Do not overcook.
Pour in the chicken broth and lemon juice. Bring the liquid to a simmer, scraping up any browned bits from the bottom of the pan. Let the sauce reduce slightly, about 1 minute.
Return the cooked broccoli to the skillet. Toss everything together to coat the shrimp and broccoli in the garlic butter sauce.
Taste and adjust seasoning with more salt or pepper if needed.
Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
For extra flavor, you can add 1/4 cup of grated Parmesan cheese to the sauce right before serving.
If you prefer a tangier sauce, increase the lemon juice to 3 tablespoons.
This dish pairs well served over rice or quinoa, or eaten as a low-carb meal.
