Make this easy one-pan meal featuring tender shrimp cooked in a rich garlic butter sauce served with rice.

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • 2 cups cooked white rice
  • 1 lemon, cut into wedges for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the shrimp with salt and pepper. Add the shrimp to the hot skillet and cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the same skillet and let it melt.
  4. Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  5. Pour in the chicken broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in the heavy cream and let the sauce simmer for 1 minute until it thickens slightly.
  7. Return the cooked shrimp to the skillet. Stir to coat the shrimp in the garlic butter sauce.
  8. Add the cooked white rice to the skillet. Stir gently until the rice is heated through and coated with the sauce.
  9. Stir in the chopped parsley.
  10. Serve the shrimp and rice immediately with lemon wedges on the side.

Notes

  • You can use pre-cooked rice to speed up the cooking time for this skillet meal.
  • For a slightly spicy flavor, add 1/4 teaspoon of red pepper flakes with the garlic.
  • If you prefer a thinner sauce, reduce the heavy cream slightly or add a splash more broth.
