Cook tender steak and flavorful rice together in one skillet for a quick weeknight dinner with minimal cleanup.

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 cup white rice, uncooked
  • 2 cups beef broth
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season the steak cubes evenly with salt and pepper.
  2. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the steak and sear for 2-3 minutes per side until browned. Remove the steak from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Stir in the uncooked rice, beef broth, and water. Bring the mixture to a boil.
  6. Once boiling, cover the skillet, reduce the heat to low, and simmer for 15 minutes, or until the liquid is mostly absorbed and the rice is tender. Do not lift the lid during this time.
  7. Remove the skillet from the heat. Stir in the butter and Italian seasoning until the butter melts and coats the rice.
  8. Return the seared steak cubes to the skillet, nestling them into the rice. Cover the skillet again and let it rest for 5 minutes to allow the steak to finish cooking and the flavors to meld.
  9. Fluff the rice gently with a fork. Garnish with fresh parsley before serving directly from the skillet.

Notes

  • For a richer flavor, use low-sodium beef broth.
  • If you prefer a vegetable, stir in 1 cup of frozen peas or chopped broccoli florets during the last 5 minutes of the rice simmering time.
  • You can use any quick-cooking steak cut, such as flank or skirt steak, cut into cubes.
