Make tender steak bites and crispy rosemary potatoes in one skillet using a rich garlic butter sauce for a quick, flavorful meal.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 lb small Yukon Gold potatoes, quartered
  • 4 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 0.5 teaspoon black pepper, divided
  • 1 teaspoon dried rosemary
  • 6 cloves garlic, minced
  • 0.5 cup unsalted butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Toss the quartered potatoes with 2 tablespoons of olive oil, 0.5 teaspoon salt, 0.25 teaspoon pepper, and the dried rosemary.
  2. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the potatoes in a single layer and cook without moving for 5 minutes to brown the bottoms. Stir and continue cooking for another 10 minutes until they start to crisp. Remove potatoes from the skillet and set aside.
  3. Pat the steak cubes dry. Season them with the remaining 0.5 teaspoon salt and 0.25 teaspoon pepper.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet. Increase heat to high. Add the steak bites in a single layer, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until browned. Remove steak from the skillet and set aside with the potatoes.
  5. Reduce heat to medium-low. Add the butter to the skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant, being careful not to burn the garlic.
  6. Return the steak bites and the crispy potatoes to the skillet. Toss everything gently in the garlic butter sauce until the steak is coated and heated through (about 1-2 minutes). Do not overcook the steak.
  7. Stir in the fresh parsley. Serve immediately.

Notes

  • For extra crispy potatoes, you can roast them separately in the oven at 400°F for 20 minutes before adding them to the skillet sauce.
  • Use sirloin or tenderloin for the best steak bite texture.
  • Adjust the amount of garlic based on your preference for garlic intensity.
