1.5 lbs sirloin steak, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
For the Chimichurri Sauce:
1 cup fresh parsley, packed
1/2 cup fresh cilantro, packed
3 cloves garlic
1/4 cup red wine vinegar
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
Instructions
Prepare the chimichurri sauce first: Combine parsley, cilantro, garlic, red wine vinegar, salt, and red pepper flakes in a food processor. Pulse until roughly chopped.
Slowly stream in the 1/2 cup olive oil while pulsing until the sauce is combined but still has texture. Set aside.
Pat the steak cubes dry with paper towels. Season the steak with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
Add half of the steak cubes to the hot skillet, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until browned. Remove the first batch and set aside.
Add the remaining steak cubes to the skillet and sear until browned on all sides. Remove and set aside with the first batch.
Reduce the heat to medium-low. Add the 4 tablespoons of butter and the 4 minced garlic cloves to the skillet. Cook for 1 minute until the garlic is fragrant, scraping up any browned bits from the bottom of the pan.
Stir in the dried oregano. Return all the steak bites to the skillet. Toss gently to coat the steak in the garlic butter mixture for about 30 seconds. Do not overcook.
Serve the garlic butter steak bites immediately with a generous drizzle of the fresh chimichurri herb sauce over the top.
Notes
Use sirloin or tenderloin for the best texture in steak bites.
For a richer flavor, use unsalted butter so you control the final salt level.
If you prefer a thinner sauce, add 1 tablespoon of water to the chimichurri.
