  • 1.5 lb sirloin steak, trimmed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steak cubes completely dry with paper towels. Season evenly with salt and pepper.
  2. Heat the olive oil in a large, heavy-bottomed skillet (cast iron works well) over medium-high heat until shimmering.
  3. Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
  4. Sear the steak for 2 to 3 minutes per side until a deep brown crust forms. For a medium-rare juicy center, remove the steak when the internal temperature reaches 130°F.
  5. Remove the seared steak bites from the skillet and set them aside on a clean plate. Do not wipe out the pan.
  6. Reduce the heat to medium-low. Add the butter to the same skillet. Once melted, add the minced garlic and Italian seasoning. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
  7. Return the steak bites to the skillet. Toss quickly to coat them thoroughly in the garlic butter sauce, about 30 seconds.
  8. Remove the skillet from the heat immediately. Stir in the fresh parsley.
  9. Serve the steak bites right away to maintain the juicy center.
