1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for at least 30 minutes.
In a medium bowl, whisk together the olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper to create the marinade.
Add the cubed chicken to the marinade and toss until every piece is coated. Cover the bowl and refrigerate for at least 15 minutes, or up to 4 hours.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
To Grill: Preheat your grill to medium-high heat. Grill the skewers for 4-6 minutes per side, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F).
To Air Fry: Preheat your air fryer to 380°F (195°C). Place the skewers in a single layer in the air fryer basket, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through, until cooked through.
Remove the skewers from the heat. Garnish with fresh chopped parsley before serving.
Notes
For extra moisture, you can brush the skewers with a little melted butter during the last few minutes of cooking.
If you prefer a crispier coating, reserve 1 tablespoon of the Parmesan cheese from the marinade and sprinkle it over the skewers during the last 2 minutes of grilling or air frying.
