2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups granulated sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 cup grated zucchini (about 1 medium zucchini)
1/2 cup lemon juice (from about 2 lemons)
1 tablespoon lemon zest (from about 1 lemon)
For the Glaze:
1 cup powdered sugar
2-3 tablespoons lemon juice
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, beat together the granulated sugar and vegetable oil until well combined.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gently fold in the grated zucchini, lemon juice, and lemon zest until just combined.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
While the cake is cooling, prepare the glaze. Whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth. Add more lemon juice, a teaspoon at a time, if needed to reach desired drizzling consistency.
Drizzle the glaze over the cooled cake.
