- 1 cup fresh spinach, finely chopped
- 1/2 cup whole-grain breadcrumbs
- 1/4 cup milk (any type)
- 1 large egg, lightly beaten
- 1/2 small onion, finely minced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons ketchup (for topping)
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard loaf pan.
- In a small bowl, combine the breadcrumbs and milk. Let stand for 5 minutes until the breadcrumbs absorb the liquid.
- In a large bowl, combine the soaked breadcrumbs, ground turkey, chopped spinach, egg, minced onion, minced garlic, thyme, sage, salt, and pepper.
- Mix all ingredients gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
- Press the mixture evenly into the prepared loaf pan.
- Spread the ketchup evenly over the top surface of the meatloaf.
- Bake for 50 to 60 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- Remove from the oven and let the meatloaf rest in the pan for 10 minutes before slicing and serving.

- For a gluten-free option, substitute the breadcrumbs with oat flour or almond flour.
- If you prefer a glaze other than ketchup, mix 2 tablespoons of low-sugar barbecue sauce with 1 teaspoon of apple cider vinegar.
