2 cups rolled oats
1/2 cup chopped nuts (almonds, walnuts, pecans)
1/4 cup seeds (chia, flax, sunflower)
1/4 cup dried fruit (raisins, cranberries, apricots)
1/3 cup honey or maple syrup
1/4 cup nut butter (peanut, almond, cashew)
1 teaspoon vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
In a large bowl, combine oats, nuts, seeds, and dried fruit.
In a separate small bowl, whisk together honey or maple syrup, nut butter, vanilla extract, and salt until smooth.
Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
Press the mixture firmly and evenly into the prepared baking pan.
Bake for 20-25 minutes, or until golden brown and set.
Let cool completely in the pan before cutting into bars.
Notes
For a chewier bar, reduce baking time slightly.
Add chocolate chips or shredded coconut for extra flavor.
Store bars in an airtight container at room temperature for up to a week.
