1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 cup soft caramel candies, unwrapped
2 tablespoons heavy cream
1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil (or shortening)
Instructions
Prepare the shortbread base: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, mix the flour, softened butter, sugar, and vanilla extract until a crumbly dough forms. Press this mixture evenly into the bottom of the prepared pan.
Bake the shortbread for 15 to 18 minutes, or until the edges are lightly golden. Let it cool completely in the pan.
Prepare the caramel layer: In a small saucepan over low heat, combine the unwrapped caramel candies and heavy cream. Stir constantly until the mixture is smooth and fully melted.
Pour the warm caramel evenly over the cooled shortbread base. Let this set at room temperature for about 30 minutes, or chill briefly until firm enough to handle.
Cut the shortbread and caramel into small, bite-sized rectangles or squares. Place these pieces on a parchment-lined baking sheet.
Prepare the chocolate coating: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely smooth.
Dip each caramel shortbread piece into the melted chocolate, ensuring it is fully coated. Return the coated bites to the baking sheet.
Chill the Homemade Twix Bites for at least 1 hour, or until the chocolate is set. Once firm, you can store them in an airtight container.
Notes
For a quicker set on the caramel, you can place the shortbread layer in the freezer for 10 minutes before adding the caramel.
If you want a thinner chocolate coating, add a teaspoon more coconut oil to the melted chocolate.
