A recipe to make a thick, creamy, coffee-free vanilla blended drink at home that tastes like a coffee shop version.

Ingredients

  • 1 cup whole milk or preferred non-dairy milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon vanilla bean paste or powder (optional, for specks)
  • 1 1/2 cups ice cubes
  • 1/4 teaspoon xanthan gum (for thickness, optional)

Instructions

  1. Combine the milk, heavy cream, sugar, vanilla extract, and vanilla bean paste (if using) in a blender.
  2. Add the ice cubes to the blender.
  3. If you are using xanthan gum for extra thickness, add it now.
  4. Secure the lid and blend on high speed until the mixture is completely smooth and thick. You may need to stop and scrape down the sides.
  5. If the mixture is too thin, add a few more ice cubes and blend again until you reach your desired consistency.
  6. Pour the blended drink into a tall glass.
  7. Top with whipped cream and a drizzle of vanilla syrup, if desired. Serve immediately.

Notes

  • For a richer flavor, substitute half of the milk with vanilla ice cream.
  • If you do not have xanthan gum, blending for a longer time with slightly less milk helps achieve a thicker texture.
  • You can add one shot of cooled espresso for a vanilla coffee frappuccino variation.
