Prepare an easy, flavorful baked meal featuring chicken and potatoes coated in a sweet and tangy honey BBQ sauce, cooked together in one dish.

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1.5 lbs small red or gold potatoes, quartered
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup honey
  • 0.5 cup BBQ sauce (your favorite kind)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss the quartered potatoes with olive oil, salt, and pepper until coated. Spread the potatoes in a single layer in the prepared baking dish.
  3. Bake the potatoes alone for 15 minutes to give them a head start.
  4. While the potatoes bake, prepare the sauce. In a small bowl, whisk together the honey, BBQ sauce, apple cider vinegar, smoked paprika, and garlic powder.
  5. Remove the potatoes from the oven. Push the potatoes to the sides of the dish, creating space in the center for the chicken.
  6. Place the chicken pieces in the center of the dish. Brush half of the honey BBQ sauce mixture evenly over the chicken.
  7. Return the dish to the oven and bake for another 15 minutes.
  8. Remove the dish again. Brush the remaining sauce over the chicken and potatoes.
  9. Bake for a final 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and slightly caramelized.
  10. Let the dish rest for 5 minutes before serving.

Notes

  • If you use chicken breasts, check the internal temperature earlier as they cook faster than thighs.
  • For crispier potatoes, ensure they are in a single layer and not touching the chicken too much during the initial bake.
  • You can add 1 cup of broccoli florets or sliced onions during the last 15 minutes of cooking for extra vegetables.
