Make crispy, tender chicken bites coated in a thick, sweet, and savory honey garlic glaze, served over perfectly cooked jasmine rice for a fast weeknight meal.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup jasmine rice
  • 1.5 cups water
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Optional: Sliced green onions and sesame seeds for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork.
  2. In a medium bowl, toss the chicken pieces with salt and pepper. In a separate shallow dish, place the flour. Dredge each piece of chicken lightly in the flour, shaking off any excess.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the floured chicken in a single layer (work in batches if necessary) and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
  4. To make the sauce, combine the honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil in the same skillet. Bring the mixture to a simmer over medium heat, stirring constantly.
  5. Once simmering, whisk in the cornstarch slurry. Continue to cook, stirring, until the sauce thickens and becomes glossy, about 1-2 minutes.
  6. Return the cooked chicken bites to the skillet. Toss gently until every piece is fully coated in the thick honey garlic glaze.
  7. To assemble the bowls, divide the fluffy jasmine rice among serving bowls. Top generously with the sticky honey garlic chicken bites. Garnish with sliced green onions and sesame seeds.

Notes

  • For extra crispy bites, you can air fry the floured chicken at 400°F (200°C) for 12-15 minutes before tossing in the sauce.
  • Add 1/2 cup of steamed broccoli florets or sliced bell peppers to the bowl for added vegetables.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce while it simmers.
