1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup low-sodium soy sauce
1/2 cup honey
1/4 cup rice vinegar
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
2 cups cooked brown rice
1 cup broccoli florets, lightly steamed
1 red bell pepper, thinly sliced
1 large carrot, julienned
1/2 cup shelled edamame, cooked
2 green onions, sliced for garnish
1 teaspoon sesame seeds for garnish
Instructions
In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes for the sauce. Set aside half of the sauce mixture for later use.
Heat a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes.
Pour the reserved half of the sauce mixture over the cooked chicken. Bring to a simmer.
Stir the cornstarch slurry and pour it slowly into the simmering sauce, stirring constantly until the sauce thickens into a glaze. Remove the chicken from the heat.
Prepare your fresh vegetables: steam the broccoli until tender-crisp, and slice the bell pepper and carrot.
Assemble the bowls: divide the cooked brown rice among four bowls. Top the rice with the glazed chicken.
Arrange the steamed broccoli, sliced red bell pepper, julienned carrot, and edamame around the chicken.
Drizzle the remaining uncooked half of the honey garlic sauce over the chicken and vegetables.
Garnish each bowl with sliced green onions and sesame seeds before serving.
Notes
For quicker cooking, you can cut the chicken into thinner strips before cooking.
If you prefer a milder flavor, reduce the amount of soy sauce slightly.
