Make this sweet and savory honey garlic chicken and rice entirely in one skillet for a fast, easy weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 2 green onions, sliced, for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. In a small bowl, whisk together the honey, soy sauce, rice vinegar, ginger, and red pepper flakes (if using). Pour this sauce mixture into the skillet. Bring to a simmer.
  5. Stir in the uncooked rice and chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and cook for 15 minutes without lifting the lid.
  6. After 15 minutes, remove the lid. The rice should be mostly cooked. Stir the reserved chicken back into the skillet.
  7. In a small bowl, whisk together the water and cornstarch to create a slurry. Pour the slurry over the chicken and rice mixture. Stir gently to combine.
  8. Cover the skillet again and cook for another 5 minutes, or until the sauce has thickened and the chicken is cooked through and the rice is tender.
  9. Remove from heat. Garnish with sliced green onions before serving directly from the skillet.

Notes

  • For best results, use low-sodium soy sauce to control the overall salt level.
  • If the sauce thickens too quickly before the rice is done, add a splash more broth or water.
  • You can substitute brown rice, but increase the cooking time by about 15-20 minutes.
