1 lb large shrimp, peeled and deveined
1 tbsp olive oil
3 cloves garlic, minced
1/4 cup honey
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp grated fresh ginger
1/4 tsp red pepper flakes (optional)
2 cups cooked rice (for serving)
1 cup steamed broccoli florets (for serving)
1 tbsp chopped green onion, for garnish
Instructions
In a small bowl, whisk together the honey, soy sauce, rice vinegar, ginger, and red pepper flakes to make the sauce. Set aside.
Heat the olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until pink.
Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Pour the prepared honey garlic sauce over the shrimp. Stir constantly and cook for 1-2 minutes until the sauce thickens slightly and coats the shrimp.
To assemble the bowls, divide the cooked rice between two bowls. Top with the honey garlic shrimp and steamed broccoli.
Garnish with chopped green onion before serving.
Notes
You can use frozen shrimp; thaw them completely and pat them very dry before cooking for better searing.
If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
Use quinoa or noodles instead of rice for a different base.
