A simple recipe for creamy chicken salad featuring a sweet and tangy honey mustard dressing, mixed with crunchy celery and sweet grapes.

  • 2 cups cooked, shredded chicken (rotisserie works well)
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup seedless red or green grapes, halved
  • 1/4 cup celery, finely chopped
  • 1/4 cup pecans, lightly toasted and chopped

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, and apple cider vinegar until smooth. This is your honey mustard dressing.
  3. Pour the dressing over the chicken. Mix gently until the chicken is evenly coated.
  4. Fold in the halved grapes, chopped celery, and chopped pecans.
  5. Taste the salad and add salt and pepper as needed.
  6. Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.

Notes

  • For a lighter version, substitute half of the mayonnaise with plain Greek yogurt.
  • If you do not have pecans, walnuts make a good substitute.
  • This salad keeps well in an airtight container in the refrigerator for up to four days.
  • Serve this salad on lettuce leaves, in croissants, or with crackers.
