Prepare this fast and simple honey soy chicken bowl for a satisfying weeknight dinner. The chicken cooks quickly in a sweet and savory glaze.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 cups cooked white or brown rice
  • 1 cup steamed broccoli florets
  • 1/2 cup sliced carrots
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. This is your marinade and sauce base.
  2. Add the cut chicken pieces to half of the sauce mixture. Toss to coat and let it marinate for 5 minutes while you prepare the pan. Reserve the other half of the sauce mixture.
  3. Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 5 to 7 minutes, turning occasionally, until the chicken is browned and cooked through.
  4. Add the steamed broccoli and carrots to the skillet with the chicken. Cook for 2 minutes, stirring constantly.
  5. Pour the reserved half of the sauce mixture into the skillet. Bring the sauce to a simmer.
  6. Stir the cornstarch slurry again and pour it slowly into the simmering sauce while stirring. Cook for 1 minute until the sauce thickens and becomes glossy.
  7. Divide the cooked rice among serving bowls. Top with the honey soy chicken and vegetables.
  8. Garnish with sliced green onions and sesame seeds before serving immediately.

Notes

  • For extra flavor, use low-sodium soy sauce.
  • If you prefer a thicker glaze, add a little more cornstarch slurry.
  • You can substitute chicken thighs for breasts if desired; adjust cooking time slightly.
