1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 cup broccoli florets
1 large carrot, sliced thinly
1 red bell pepper, sliced
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup honey
1/4 cup low sodium soy sauce
2 tablespoons water
1 tablespoon cornstarch
Cooked rice, for serving
Instructions
Mix the honey, soy sauce, water, and cornstarch in a small bowl to create the sauce. Set aside.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken pieces to the skillet and cook until browned on all sides and nearly cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the broccoli, carrots, and bell pepper to the same skillet. Cook, stirring occasionally, for 5 minutes until the vegetables start to soften.
Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
Return the cooked chicken to the skillet with the vegetables.
Whisk the reserved sauce mixture again and pour it over the chicken and vegetables.
Bring the sauce to a simmer, stirring constantly until the sauce thickens and coats the chicken and vegetables, about 1 to 2 minutes.
Serve the honey soy chicken and veggies immediately over cooked rice.
Notes
For extra flavor, use chicken thighs instead of breasts.
You can substitute the mixed vegetables with snap peas or mushrooms.
Garnish with sesame seeds or sliced green onions before serving.
