Follow this recipe to make tender chicken thighs coated in a sweet and savory honey soy glaze that develops crispy edges when baked.

  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Pat the chicken thighs very dry with paper towels. This step helps achieve crispy skin.
  2. In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
  3. Place the chicken thighs in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring all pieces are coated. Reserve the remaining half for basting later. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  4. Heat the vegetable oil in a large, oven-safe skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off. Place the chicken thighs skin-side down in the hot skillet.
  5. Sear the chicken for 4 to 5 minutes without moving them until the skin is deeply golden brown and crispy.
  6. Flip the chicken thighs. Transfer the entire skillet to the preheated oven.
  7. Bake for 18 to 22 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
  8. Remove the skillet from the oven. Brush the reserved marinade over the chicken. Let the chicken rest in the skillet for 5 minutes before serving.

Notes

  • For extra crispiness, you can briefly broil the chicken for the last 1-2 minutes, watching closely to prevent burning the glaze.
  • Serve this chicken over steamed rice or with roasted broccoli for a complete meal.
